Description

UTC-10000 is α-amylase produced by using a selected fungi strain and by the controlled liquid submerged fermentation as well as special post treatment process. UTC-10000 hydrolyzes amylase and amylopectin into dextrin and maltose by breaking alpha-1, 4-linkage.
Function
l Increase the utilization of accessories and reduce the cost.
l Effectively hydrolyze α-1, 4 and α-1, 6 glucosidic linkage of starch, improve the level of fermentable sugar and benefit the fermentation control during the dry beer production.
l Dextrin and maltose provide abundant nutrients for yeast so it can work continuously during dough fermentation, proofing and the early stage of baking.

l Activity: 10,000 FAU/g
l Appearance: off-yellow powder
l Solubility: miscible with water
Application
l pH 4.0~6.5 and temperature 40~60℃.
l UTC-10000 can be directly put into mash tun or firstly dissolved it by saccharifying water at 20-50℃, then mixed into mash tun.
l Widely used in many field such as beer saccharification, flour processing and starch glucose industries.

UTC-10000 is available in standard package of 20 kg/barrel
